The best Huevos rancheros

Most mornings during the week I tend to stick to the basics when it comes to breakfast.Smoothies,porridge and the odd omelette.Some mornings I wont even have breakfast first thing as I generally am working with my first client of the day come 5/5.30am so I really dont have the stomach for anything too early.However come 8/9am I am really getting a good feed in.

Come Sunday I really am switched off and relaxed after a week full of training clients,writing different articles and general day to day tasks of running a business.Most Sundays after a little lie in I 100% either head out for brunch or make our own.It could be anything like some protein banana pancakes to something little more fancy like Huevos rancheros!

Thats what we made today and they were delicious!Below is the simple recipe and method and wont take too much longer than 20 minutes to get make.

What you need

  • 1-2 onion
  • 1-2 cloves of garlic
  • 1 pepper
  • 4 eggs
  • spinach
  • kidney beans
  • chopped tomatoes
  • coconut oil
  • salt/pepper

Method

Lets keep this really simple and link the video below of everything you need to know.Its really easy to follow and wont even take too long to make.First I want you to get a pan and heat up some coconut oil then simple watch the video and start adding the ingredients that you need.
